Olive

The fruit of the olive tree, an ancient tree whose origins lie in the eastern Mediterranean. There are hundreds of varieties of olive grown around the world. Generally, there are two types of olive, which are green olives and black olives.
Green Olives are young olives picked green and cured.
Black Olives are olives picked half ripe(purple) or fully ripe (black) and cured.

Olive oil is made by crushing the flesh of olives and cold pressing it to extract the oil. Virgin and extra virgin have a strong flavour and are best used for dressings. Refined oilive oil are best for cooking. Olibe oil being known to reduce "bad" cholesterol, stabilise blood sugar and even work as an inflammatory. Olive oil has also known to be effective in protecting the cells of the colon from cancer-causing chemicals. This may be due to its abilty to reduce the amount of carcinogenics formed when meats are cooked in extra virgin olive oil compared to more refined oils.
