Mushroom

Also known as Black Mushroom. Mushrooms are the fruit of the fungus that grows above ground. They are countless variety of edible mushrooms, some cultivated, others gathered from the wild. The flavour of some mushrooms intendifies when dried, so mushroom such as Chinese dried black mushroom and Italian porcini and etc are often bought dried, then reconsituted. Soak in warm water for 30 minutes, cut off the stalk and chop the caps. The soaking water will be flavourful, so strain it and add to stock or a sauce. Canned mushroom should be drained and rinsed before use.
